Jasmine Hibbitt

Title: Sous Chef

Years at Camp: 1st year in 2010

Department: Kitchen

Camp Bio:

This will be Jasmine's first year at Camp Ballibay. She is very excited to join such a superb culinary team.
Jasmine wants to share her love for cooking from scratch with fresh ingredients with all the campers. She is looking forward to having a summer of healthy and delicious food made from the heart.

Professional/School Bio:

Jasmine is a recent graduate of the French Culinary Institute in Manhattan. She spent nine months training with some of the best chefs throughout the city and abroad learning classical French techniques of cooking. During her time in school, she worked on the line in the FCI's restaurant, L'Ecole.
After graduation, Jasmine worked as a cook in the small but successful Inatesso Cafe Casano in Manhattan. Here she was able to sharpen her skills in the kitchen and also learn the basics of operating a small food service business.
Jasmine has volunteered her time working in the James Beard House with various restaurant chefs throughout the country. She worked on a Gail Simmons video shoot with a well known food writer and stylist (not as glamorous as it seems). She also interned at Allegretti Restaurant in the city where she learned the value of focus and discipline in the kitchen.
As a proponent of healthy and thoughtful eating, Jasmine hopes to become involved in New York City's public schools to help reform the current lunch program. She wants to be an advocate and educator of better food as a way of life.
Prior to her culinary venture, Jasmine attended Binghamton University where she earned a degree in English/Creative writing. She traveled abroad after University graduation and taught English at a summer camp and a private school in Poland.
Even though Jasmine spends a lot of time in the kitchen, she still loves creative writing and reading. She relaxes by riding her bike around her hometown of Astoria, NY where she can go down to the Queens waterfront and feel the salty breeze.

About the Staff of the Ballibay Camps

A key to the success of any camping season is staff. We spend a great deal of time screening and selecting our staff before every summer, and we have been fortunate to have many talented counselors and teachers remain with us season after season. Our staff members are predominantly educators and university students from the United States, although we also have a strong international component to our staff.

Our staff members come to us with outstanding credentials: professional experience, a background in teaching, and/or exceptional skills in their specialties. Most of all, we seek good, caring people who are interested in the well-being and growth of children. We look for people who, knowing something of the competitive nature of the adult world, are excited to put those concerns aside for a summer and focus on "the journey" in a non-competitive, fun, friendly environment.
