Susan is thrilled to be working with Chef Holly this summer in continuing to transform the food at Ballibay to an extraordinary example of camp food that is local, seasonal, health supportive and most importantly, DELICIOUS. Susan divides her time between the kitchen and the garden along with being involved with Ballibay's composting project.

Susan's youngest daughter, Mikey had a blast last summer and is super psyched for another great time at camp.

Professional/School Bio:

Dr. Susan Rubin is a holistic nutritionist, food and health expert, and mother of three. Her approach integrates whole food and healthy lifestyle with the reality of living in our busy, often chaotic, world.

In addition to her private health counseling practice in Westchester, NY, she teaches many group programs at locations throughout the tri-state area and the world with distance learning and e-books. Dr. Rubin has created food based educational programs for children of all ages as well as adults. She also works to raising the Food IQ of 4th year medical students at NY Medical College where she is an Adjunct Professor of Family Medicine.

Susan is the founder of Better School Food a non profit organization of health professionals, educators and concerned parents. BSF’s mission is to improve the food environment wherever kids meet and eat: preschools, childcare centers, K-12 schools, summer camps and colleges. Her work with school food advocacy was featured in the documentary film Two Angry Moms.

Susan is also a co-leader of Slow Food Westchester, one of over 200 chapters of Slow Food USA. She's working with Slow Food USA on nationwide school food advocacy campaign entitled, Time for Lunch.

About the Staff of the Ballibay Camps

A key to the success of any camping season is staff. We spend a great deal of time screening and selecting our staff before every summer, and we have been fortunate to have many talented counselors and teachers remain with us season after season. Our staff members are predominantly educators and university students from the United States, although we also have a strong international component to our staff.

Our staff members come to us with outstanding credentials: professional experience, a background in teaching, and/or exceptional skills in their specialties. Most of all, we seek good, caring people who are interested in the well-being and growth of children. We look for people who, knowing something of the competitive nature of the adult world, are excited to put those concerns aside for a summer and focus on "the journey" in a non-competitive, fun, friendly environment.
